A Three-Generation, 40-Year Tradition

The Original Jinju-Style Cold Noodles in Jinju

40 years of tradition crowned with beef jeon, from the noodle masters of Eolchigi

Five Days for One Noodle, Forty Years on One Road

Eolchigi never hurries. The buckwheat dough rests at low temperature for five full days, drawing out every bit of the scarce gluten that buckwheat holds.

Only dough that has waited those five days keeps the aroma and chew of buckwheat intact to the very last bite. The touch of our 40-year noodle master comes not from shortcuts, but from this patience.

What is Eolchigi?

The Story of Eolchigi, the Original Jinju-Style Cold Noodles

Jinju naengmyeon is the great cold noodle of the south, spoken of alongside Pyongyang naengmyeon. At its heart is the beef jeon topping. Laying savory pan-fried beef over chilled broth is the original Jinju way, and Eolchigi has kept this way alive for 40 years. Mul-naengmyeon in broth, spicy bibim-naengmyeon, and seokkeum-naengmyeon that unites both in one bowl: to taste true Jinju beef-jeon naengmyeon, Eolchigi is the place.

Eolchigi stands at 107 Cheonsu-ro in the Juyak-dong district. Close to Gyeongsang National University Hospital and Jeil Hospital, it is a favorite lunch spot for hospital visitors, and the on-site parking lot makes family dining easy. For elders who find cold noodles heavy there is steaming galbitang, and for gatherings the hanwoo bulgogi mushroom hot pot, grilled bulgogi and marinated ribs set the table. Guests describe Eolchigi as cold noodles graced with tender beef jeon.

In front of the Eolchigi kitchen hangs a calligraphy frame reading Seongchan-iksu (誠饌益壽): food made with sincerity lengthens the life of those who eat it. The owner looks up at these words every day to steady the heart. With this motto, Eolchigi has walked a single road for 40 years, pursuing honest ingredients and wholesome flavor.

The side dishes carry the same spirit. Every banchan at Eolchigi is made by hand in our own kitchen, one dish at a time. Never compromising for convenience is the way of a kitchen that hangs Seongchan-iksu on its wall. Whether a bowl of summer naengmyeon or a hearty galbitang meal in any season, come meet 40 years of devotion at Eolchigi in Juyak-dong.

Side Dishes Made by Hand

Every banchan on the table is made one by one in our own kitchen.

Buying ready-made would be easier. Yet Eolchigi makes every single side dish in its own kitchen, from salting the cabbage to seasoning and pickling. A kitchen that simmers its broth for 48 hours over hanwoo marrow bones and pheasant would never cut corners on the banchan beside the bowl.

The crunch of the young radish kimchi and the delicate scent of the wild garlic leaves all come from the hands of our kitchen. Never compromising for convenience: Seongchan-iksu (誠饌益壽), the belief that food made with sincerity lengthens the life of those who eat it, goes into every small plate just the same.
